WeShred Salad

  • 5 cups of Mixed Greens
  • 3oz of Baby Carrots
  • 30g of Cucumber
  • 1 Large Egg
  • 1 cup Pan Fried Broccoli
  • 28g of Athenos Feta Cheese
  • 2 Tbsp of Organicville Balsamic w/ Olive Oil Vinaigrette
  • 2 Tbsp of Aged Balsamic Vinegar
  • .25 of an Avocado

Erica Stenz Favorite Protein Shake

  • Add 8oz of Water to blender
  • Add 2 scoops of Protein Powder
  • Shake contents well
  • Add 1 cup of Ice
  • Add 1 cup of Frozen Berries
  • Blend
  • Pour into serving glasses (makes 2 servings)
  • Top smoothie with 1 tbsp Peanut Butter and dash of cocoa nibs
  • Serve and enjoy!

Erica Stenz Simple Baked Chicken

Ingredients:

  • 4-6 Large Boneless Skinless Chicken Breasts
  • Large Kitchen Knife & Cutting Board
  • High Heat Cooking Oil (I prefer Extra Virgin Avocado Oil)
  • Cayenne, Garlic Salt, Cumin, Paprika, or other spices to your flavor like McCormick All Purpose Seasonings

Instructions:

  • Preheat oven to 420F
  • Line large baking sheet with aluminum foil for easy clean up
  • Lightly grease baking sheet with cooking oil of choice
  • Add chicken breasts, flip once to spread oil on breasts
  • Coat both sides liberally with spices
  • Place in oven and bake for 12 mins
  • Remove from oven and flip breasts
  • Place tray back in oven for another 10 mins
  • Remove and let rest for 2-4 mins
  • Cube chicken breasts on cutting board to 1" cubes
  • Optional - Places cubes in bowl with drippings from baking sheet and mix for more flavor
  • Pair with your favorite roasted vegetable!
